Spicy Jackfruit Veggie Bowl (Ve)

Ingredients
- 1 tsp. oil of choice
- 1 x 400g tin of jackfruit chunks, shredded
- 1 tsp. chilli powder
- 1 tsp. paprika
- Salt and pepper to taste
Rice
- 225g wholegrain rice
- 30g kidney beans
- ½ tbsp. tomato puree
- ½ tbsp. paprika
- ½ tbsp. chilli powder
- Salt and pepper to taste
Salad Bowl
- 100g sweetcorn
- ½ an avocado
- 1 tsp. sesame seeds
- A handful of shredded red cabbage
- A handful of shredded carrots
- A handful of mixed salad leaves
Method
- Start by prepping your rice. Follow the cooking instructions for your rice of choice.
- Once the rice is cooked, add in your paprika, chilli, tomato puree, salt and pepper.
- Start assembling your salad bowl while the rice combines on low heat.
- Wash, drain and chop your salad leaves. Add avocado, red cabbage, carrot, sweetcorn and a sprinkle of sesame seeds on top.
- Remove and rinse the jackfruit. If bought in chunks, shred it using your hands or a fork. Add it to a sizzling pan with some oil.
- Add in chilli powder, paprika. Sprinkle a dash of salt and pepper. Let it cook and crisp up for around 10–12 minutes.
- Place your spicy rice on your salad bowl.
- Add your jackfruit on top.
- Season with pepper.
- Tuck in to your delicious meal!
