Endorphin-boosting Spicy Chickpea Stuffed Sweet Potato (Ve)

Spicy foods (like chilli) trigger endorphin release, reducing stress and boosting mood. This dish is sure to leave you feeling satisfied and energised.
Ingredients
- Half a can of cooked chickpeas
- 1 sweet potato
- 1 tbsp. olive oil
- 1 red chilli (chopped)
- 1 tsp. cumin
- 1 tsp. paprika
- 1 tbsp. lemon juice
Method
- Slice your sweet potato in half and roast at 400°F (200°C) for 20 minutes.
- In a pan, heat olive oil, add chickpeas, spices, and chilli, and sauté for 5 minutes.
- Stuff the sweet potatoes with your spicy chickpeas.
- Drizzle with lemon juice and serve.
