Celeriac & Potato Rösti with Garlic Aioli (Ve)
Golden, crispy, and irresistibly tasty, this rösti is the ultimate plant-based comfort food. The subtle sweetness of celeriac and potatoes pairs beautifully with a zesty vegan garlic aioli, making it a dish that’s simple, satisfying and bursting with flavour.
Ingredients
For the rösti:
- 1 medium celeriac, peeled and grated
- 2 medium potatoes, peeled and grated
- 1 small onion, finely chopped
- 2 tbsp plain flour
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
For the garlic aioli:
- 4 tbsp vegan mayo
- 1 garlic clove, minced
- 1 tsp lemon juice
Method
- Combine grated celeriac and potato in a clean tea towel and squeeze out excess water. Transfer to a bowl.
- Mix in the onion, flour, salt and pepper.
- Heat olive oil in a large frying pan over medium heat. Shape the mixture into patties and fry for 3-4 minutes on each side until golden brown.
- For the aioli, mix vegan mayo, minced garlic, and lemon juice in a small bowl.
- Serve the rösti hot with a dollop of garlic aioli.
