Ingredients
- 150g Vegan dark chocolate (70%+ for a rich, festive feel)
- 40g popped quinoa (for that holiday crunch!)
- 5g coconut oil
- Optional: Try adding some other store cupboard ingredients such as dried fruit, nuts or seeds.
Method
- Toast the quinoa in a heated pan over medium heat. Add the quinoa and toast it for 3–5 minutes, stirring constantly, until it becomes golden and starts to pop. Set aside to cool.
- In a separate bowl, break the dark chocolate into small pieces and place it in a heatproof bowl. Add the coconut oil and melt over a double pan of boiling water or in the microwave (30-second bursts, stirring in between) until smooth.
- Combine the quinoa and chocolate. Stir the toasted quinoa into the melted chocolate, ensuring all the quinoa is evenly coated. You can also add any of your additional ingredients here too.
- Then, line a baking tray with parchment paper. Drop spoonfuls of the chocolate-quinoa mixture onto the tray, shaping them into thin, round snaps.
- Flatten slightly with the back of a spoon for a crispier snap, and chill for at least one hour before enjoying.
