Rich in protein, iron, and fibre, black beans take centre stage in these delicious tacos. Pair them with creamy avocado for a satisfyingly tasty meal that's sure to become a favourite!

Ingredients
- 1 tsp. oil of choice
- 4 soft tacos
- 1 x 400g tin of black beans, rinsed and drained
- 3 medium tomatoes
- 1 avocado
- 1 lime, squeezed
- 1 fresh chilli or cayenne pepper, for spice lovers
Method
- Start by frying some onions with some oil until cooked through.
- Rinse and drain your beans, and add them to the pan on low heat. As they cook, mash them to create a chunky smashed bean paste. Add in garlic, paprika, chilli and cumin.
- As these cook, prepare the rest of your fillings. Slice, mash and season your avocado. Dice your tomato. Set aside half a lime.
- Take the beans off the heat and fill your soft taco wraps with your beans, avocado and tomatoes. Add in any other fillings you’d like, for example, nutritional yeast.
- It's time to fry your tacos. Add some vegan butter to a pan on medium heat and pan-fry both sides until golden and crunchy. Remove each taco from the heat and set aside.
- Add a squeeze of lime and let the fiesta begin!
