No 'Egg' Breakfast Bap (Ve)

Craving a hearty breakfast? Whether you're vegan or simply looking to try something different, our delicious vegan breakfast bap is a delicious twist on a classic. Packed with plant-based protein, tofu shines as the star of this satisfying breakfast bap. Loaded with flavour and nutrients, it's a fantastic way to kick-start your day on a delicious note!

  • 2 tsp. oil of choice
  • 2 toasted ciabatta rolls
  • 300g extra-firm tofu
  • 1 large, sliced tomato
  • 1 avocado
  • 1 handful of rocket
  • 80g cornflour
  • 1 tsp. mild chilli powder
  • ½ tsp. of turmeric powder
  • ½ tsp. of garlic granules
  • 1 tsp. paprika
  • Salt and pepper, to taste


  1. Press the tofu to remove excess water before slicing. (Skip this step if you have pressed tofu).
  2. Combine cornflour, salt, pepper, garlic, mild chilli powder, turmeric and paprika. Dip and cover your tofu in the mixture.
  3. Fry the tofu in a pan on medium heat with oil until golden brown.
  4. Slice your avocado and tomato. Season with salt and pepper.
  5. Toast your ciabatta until crispy.
  6. Place fresh avocado on the toasted ciabatta. Add grilled tofu and sliced tomatoes on top. Add your leafy greens like rocket.
  7. Customise your bap with toppings like vegan cheese, hot sauce or a drizzle of balsamic glaze.
