Nutty Almond French Toast (Ve)

Ingredients
- 4 slices of sourdough
- 50g cornflour
- ½ tsp. baking powder
- Vegan butter or coconut oil (for the pan)
- 200 ml of soya milk
- 1 tbsp. maple syrup
- 1 tsp. vanilla extract
Toppings
- 20g chopped almonds
- 40g frozen berries
- 1 tbsp. maple syrup
Method
- Preheat a pan with some vegan butter or coconut oil on low heat.
- In a spacious mixing bowl, whisk together soya milk, corn flour, baking powder, maple syrup and vanilla extract.
- Take each slice of bread and immerse both sides in the batter. Soak in the mixture for around 10 seconds.
- Add your bread to the heated pan. Cook on each side for around 2–3 minutes until it achieves a golden brown colour.
- Time to add toppings and serve. Put your golden French toast on a plate and drizzle with maple syrup, a dusting of powdered sugar, chopped almonds and delicious berries.
