Nutty Almond French Toast (Ve)

  • 4 slices of sourdough
  • 50g cornflour
  • ½ tsp. baking powder
  • Vegan butter or coconut oil (for the pan)
  • 200 ml of soya milk
  • 1 tbsp. maple syrup
  • 1 tsp. vanilla extract


  • 20g chopped almonds
  • 40g frozen berries
  • 1 tbsp. maple syrup


  1. Preheat a pan with some vegan butter or coconut oil on low heat.
  2. In a spacious mixing bowl, whisk together soya milk, corn flour, baking powder, maple syrup and vanilla extract.
  3. Take each slice of bread and immerse both sides in the batter. Soak in the mixture for around 10 seconds.
  4. Add your bread to the heated pan. Cook on each side for around 2–3 minutes until it achieves a golden brown colour.
  5. Time to add toppings and serve. Put your golden French toast on a plate and drizzle with maple syrup, a dusting of powdered sugar, chopped almonds and delicious berries.
