Maple-Roasted Veggies (Ve)

This festive side dish is rich in Vitamin A and C, which are great for helping keep your immune system and skin merry and bright. But that's not all. Parsnips are rich in fibre, while carrots are high in calcium.

Ingredients:

  • 1 tbsp. cooking oil of choice 
  • 8 medium parsnips
  • 8 medium carrots
  • 2 tbsp. maple syrup
  • Salt and pepper to taste

Method:

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice your parsnips and carrots into bite-sized pieces.
  3. In a mixing bowl, combine the sliced parsnips and carrots. Add maple syrup, salt and pepper to taste. Toss the veggies until they are evenly coated with the maple syrup mixture.
  4. Drizzle some cooking oil onto a baking sheet, ensuring it's evenly coated.
  5. Transfer the maple-coated parsnips and carrots onto the oiled baking sheet, spreading them out in a single layer.
  6. Roast the veggies in the preheated oven for approximately 20 minutes or until they are soft and caramelised. Make sure to toss the veggies halfway through the roasting time for even cooking.
  7. Once the veggies are tender and golden brown, remove them from the oven.
