Spicy Thai Red Curry (Ve)

Get ready to transport your taste buds to Thailand with this easy recipe. Indulge in the vibrant flavours of Spicy Thai Red Curry, a tantalising vegan dish that's as delicious as it is nutritious. Bursting with colourful bell peppers and a blend of aromatic spices, this curry is sure to tantalise your taste buds while providing a Vitamin C boost to support immune health.

  • 400 ml of coconut milk
  • 50g Thai red curry paste
  • 1 red pepper, chopped
  • 125g baby corn
  • 100g green beans
  • 150g mangetout
  • 100g cooked rice
  • Chilli powder and flakes, to add extra spice


  1. Wash all your vegetables. Slice your pepper and green beans.
  2. Sauté your peppers on medium heat in a large pan.
  3. Once softened, add in the rest of your vegetables along with the red curry paste. Let it cook for around 10 minutes.
  4. Start cooking your rice in a different pan for around 10 minutes until soft. Follow the cooking instructions on the packet of your rice of choice.
  5. Add in the coconut milk to your curry. Leave to simmer until the rice is done.
  6. For extra spice, add in fresh chilli slices or chilli powder to your curry. Simmer for 5 minutes.
  7. Once the rice is cooked, remove it from the heat. Serve your rice and spoon your curry on top.
  8. Sit back and enjoy this hearty meal!
