Vegan Chocolate Cake (Ve)
A cake for all! Ideal for a celebration cake - whether that be a vegan friend's birthday or an event where you have to cater to a variety of diets. This is a simple no-brainer recipe for everyone to enjoy.
This cake may have avocados in but it is not the healthiest, remember it's a celebration cake not an every day recipe. However, there is no denying this vegan cake recipe is absolutely delicious!
Ingredients
285g self-rising flour, sifted
225g caster sugar
1 ½ tsp baking powder
200g Vegan Mayonnaise - we recommend Lucy's Dressings
4 tbs cocoa powder
8 floz boiling water
1 tsp vanilla extract
For the icing
2 ripe avocados
2 tbs coconut oil, melted
4 tbs cocoa powder
4 tbs maple syrup
160g Vegan 70% Chocolate
Pinch salt - optional
2 x 7-inch sandwich tins lined
Method
- Preheat oven to 180c / 160 fan.
- Place the flour, sugar, baking powder and mayonnaise in a large bowl and whisk together with an electric hand whisk until there are no lumps.
- Dissolve the cocoa in the boiling water and whisk into the mixture with the vanilla extract until thoroughly blended.
- Divide the mixture between the 2 tins and bake for 20 -25 minutes or until a skewer comes out clean.
- Turn out to cooling rack and allow to cool.
- When cooled, ice and decorate to your heart's content by mixing all ingredients.
- Eat and enjoy!!
