Nutrient-Packed Tofu Stir Fry (Ve)
This vibrant vegan stir-fry isn’t just delicious—it’s a wholesome, plant-based dish packed with nourishing, whole-food ingredients to support overall wellness, but in particular, prostate health.
Tofu’s isoflavones, broccoli’s sulforaphane, and tomatoes’ lycopene create a powerful combination of compounds that have been shown to support prostate health. Tomatoes are also rich in anti-oxidants and turmeric has been shown to help reduce inflammation.
Here's what you'll need:
Ingredients:
- 1 handful of organic tofu, cubed
- 2 handfuls of broccoli florets
- 1/2 cups cooked quinoa
- 5-6 cherry tomatoes, halved
- 1 tbsp extra virgin olive oil
- 1 clove garlic, minced
- 1 tsp turmeric
- 1 tbsp lemon juice
- Salt and pepper, to taste
- (Optional: Add chopped almonds and/or currants)
Method:
- Prepare the quinoa according to the package instructions and set aside
- Sauté vegetables, heating olive oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add broccoli, stirring occasionally and cook until bright green and tender, about 3-4 minutes.
- Add the cubed tofu and cherry tomatoes to the pan. Cook for 5-7 minutes, allowing the tofu to become golden and the tomatoes to soften and release their juices.
- Sprinkle in the turmeric, lemon juice, salt and pepper. Stir to combine and cook for an additional 2 minutes to let the flavours come together.
- Plate the stir fry over a bed of cooked quinoa.
