No 'Egg' Breakfast Bap (Ve)
Craving a hearty breakfast? Whether you're vegan or simply looking to try something different, our delicious vegan breakfast bap is a delicious twist on a classic. Packed with plant-based protein, tofu shines as the star of this satisfying breakfast bap. Loaded with flavour and nutrients, it's a fantastic way to kick-start your day on a delicious note!

Ingredients
- 2 tsp. oil of choice
- 2 toasted ciabatta rolls
- 300g extra-firm tofu
- 1 large, sliced tomato
- 1 avocado
- 1 handful of rocket
- 80g cornflour
- 1 tsp. mild chilli powder
- ½ tsp. of turmeric powder
- ½ tsp. of garlic granules
- 1 tsp. paprika
- Salt and pepper, to taste
Method
- Press the tofu to remove excess water before slicing. (Skip this step if you have pressed tofu).
- Combine cornflour, salt, pepper, garlic, mild chilli powder, turmeric and paprika. Dip and cover your tofu in the mixture.
- Fry the tofu in a pan on medium heat with oil until golden brown.
- Slice your avocado and tomato. Season with salt and pepper.
- Toast your ciabatta until crispy.
- Place fresh avocado on the toasted ciabatta. Add grilled tofu and sliced tomatoes on top. Add your leafy greens like rocket.
- Customise your bap with toppings like vegan cheese, hot sauce or a drizzle of balsamic glaze.
