Creamy Avocado Pasta Salad (Ve)

Indulge in the creamy goodness of avocados with this delicious pasta salad recipe! Packed with nutrient-rich ingredients and featuring a luscious basil pesto dressing, it's a dish that's sure to satisfy your taste buds while nourishing your body. Whip it up for a quick lunch or enjoy it as a refreshing side dish any time of the year.

Basil pesto dressing

  • 50 ml oil of choice
  • 1 cup of basil leaves
  • 70g almonds
  • ½ tsp. chilli flakes
  • 1 garlic clove
  • Dash of water
  • Salt and pepper


  • 200g cooked pasta
  • 1 red bell pepper
  • ½ avocado cut into chunks
  • Handful of kale

Optional: add chopped cherry tomatoes, some vegan cheese, chopped baby spinach and some cashews for the crunch factor! (Not for nut allergies obviously)


  1. Start with your pasta. Follow the instructions on the pasta of your choice.
  2. While the pasta cooks, blend or chop together the basil leaves, almonds, oil, chilli flakes, garlic, water, salt and pepper. Blend longer for a smoother texture.
  3. In a separate bowl, mix the dressing generously with your drained, cooked pasta until all is covered.
  4. Wash and chop your vegetables.
  5. Add avocado chunks, sliced red bell peppers and crispy kale to your pasta bowl.
  6. Give it all a gentle mix together. Plate up and dig in!
