Spicy Jackfruit Veggie Bowl (Ve)

  • 1 tsp. oil of choice
  • 1 x 400g tin of jackfruit chunks, shredded
  • 1 tsp. chilli powder
  • 1 tsp. paprika
  • Salt and pepper to taste


  • 225g wholegrain rice
  • 30g kidney beans
  • ½ tbsp. tomato puree
  • ½ tbsp. paprika
  • ½ tbsp. chilli powder
  • Salt and pepper to taste

Salad Bowl

  • 100g sweetcorn
  • ½ an avocado
  • 1 tsp. sesame seeds
  • A handful of shredded red cabbage
  • A handful of shredded carrots
  • A handful of mixed salad leaves


  1. Start by prepping your rice. Follow the cooking instructions for your rice of choice.
  2. Once the rice is cooked, add in your paprika, chilli, tomato puree, salt and pepper.
  3. Start assembling your salad bowl while the rice combines on low heat.
  4. Wash, drain and chop your salad leaves. Add avocado, red cabbage, carrot, sweetcorn and a sprinkle of sesame seeds on top.
  5. Remove and rinse the jackfruit. If bought in chunks, shred it using your hands or a fork. Add it to a sizzling pan with some oil.
  6. Add in chilli powder, paprika. Sprinkle a dash of salt and pepper. Let it cook and crisp up for around 10–12 minutes.
  7. Place your spicy rice on your salad bowl.
  8. Add your jackfruit on top.
  9. Season with pepper.
  10. Tuck in to your delicious meal!
