Pumpkin Hummus (Ve)
Cosy and nourishing, our pumpkin hummus recipe is ideal for snacking during the fall and winter months. Pumpkins are rich in beta-carotene, an antioxidant that helps the body fight off colds and flu.
Ingredients
- 1 can (400g) of chickpeas
- 125ml of pumpkin purée
- 3 tbsp tahini
- 2-3 cloves of garlic
- 1 lemon (fresh juice)
- A pinch of salt and pepper
- 1 tsp cumin
- ½ tsp paprika
- ¼ tsp cinnamon
- 2 tbsp of olive oil
Method
- Drain and rinse chickpeas.
- Add all ingredients to a blender and blend until smooth and creamy.
- You may need to add more olive oil or a little bit of water to get the desired consistency you want.
- Garnish with roasted pumpkin seeds and other toppings of your choice.
