Spicy Thai Red Curry (Ve)

Ingredients
- 400 ml of coconut milk
- 50g Thai red curry paste
- 1 red pepper, chopped
- 125g baby corn
- 100g green beans
- 150g mangetout
- 100g cooked rice
- Chilli powder and flakes, to add extra spice
Method
- Wash all your vegetables. Slice your pepper and green beans.
- Sauté your peppers on medium heat in a large pan.
- Once softened, add in the rest of your vegetables along with the red curry paste. Let it cook for around 10 minutes.
- Start cooking your rice in a different pan for around 10 minutes until soft. Follow the cooking instructions on the packet of your rice of choice.
- Add in the coconut milk to your curry. Leave to simmer until the rice is done.
- For extra spice, add in fresh chilli slices or chilli powder to your curry. Simmer for 5 minutes.
- Once the rice is cooked, remove it from the heat. Serve your rice and spoon your curry on top.
- Sit back and enjoy this hearty meal!
