Refreshing Watermelon Mint Mocktail (Ve)

Ingredients
- 2 fresh mint leaves, plus more for garnish
- 1 handful of ice
- 3/4 cup watermelon juice (see below)
- 1/2 cup sparking water
- Small slice of watermelon for garnish
*Watermelon juice: Puree together 1 1/2 cups seedless watermelon chunks in a blender until smooth. Sieve through to separate the juice to use in your mocktail.
Method
- Mash mint leaves at the bottom of a large cocktail glass or pint glass using a small spoon.
- Fill the glass one-third full of ice, then add watermelon juice.
- Pour in the sparkling water and gently stir.
- Garnish with a small slice of watermelon and additional mint leaves if desired.
