Simple, Warming Apple Oats (Ve)
If you're craving a cosy, comforting breakfast, these Simple Warming Apple Oats are perfect for chilly mornings.
Packed with spiced apples and a crunchy peanut butter oat topping, this dish is rich in fibre and healthy fats. The oats and chia seeds support heart health and digestion, while apples provide antioxidants and vitamin C.
Ingredients:
- 2 apples, peeled and cut into chunks
- 20ml runny maple syrup
- 50ml water
- 30g oats
- 10g of peanut butter
- 10ml of maple syrup (for the peanut butter mixture)
- Sprinkle of chia seeds
- ½ teaspoon of cinnamon (optional)
- Vegan yoghurt (optional)
Instructions:
- In a small saucepan, combine the 20ml of maple syrup with 50ml of water. Add the peeled and chunked apples and your cinnamon (optional).
- Let the apples simmer over medium heat for about 15 minutes, or until they soften and the liquid evaporates.
- While the apples cook, mix together the oats, peanut butter, and 10ml of maple syrup in a small bowl. Sprinkle chia seeds into the mixture for an extra nutritional support.
- Once the apples are done, transfer them into a baking dish. Spread the oat and peanut butter mixture on top.
- Bake in a preheated oven at 180°C for 15 minutes, until the top is slightly crispy and warmed through.
- Remove from the oven, stir everything together, and if you like, top it off with a dollop of vegan yoghurt for added creaminess.
